Local bakery and brewery teaming up to help eliminate food waste

Clasen’s European Bakery and Capital are teaming up to make a new line of sandwich breads and soft pretzels.

The two businesses found an innovative way to combine their expertise and minimize food waste by utilizing spent grains from Capital Brewery’s beer brewing process, which are typically discarded.

"So far we've created two original recipes using grains from Capital Brewery's Wisconsin Amber and Supper Club Lagers - Amber White bread and Supper Club Wheat bread - and that's just the beginning," said Michelle Clasen, owner of Clasen's Bakery.

Amber White and Supper Club Wheat are made using a sourdough starter which lends a nutty flavor and richer texture than traditional white and wheat sandwich breads. Both breads are currently available for purchase at Clasen's Bakery. Starting mid-October, spent grain soft pretzels will be available at Capital Brewery's outdoor Bier Garten and indoor Bier Stube and Grain Room.
